Description
This super easy, rich, vegan, gluten-free Spicy Peanut dressing is filled with the flavors of peanut butter, coconut, soy, ginger, garlic, and green curry paste.
Ingredients
- 3 tablespoons creamy, natural peanut butter
- 3 tablespoons coconut milk beverage (not canned)
- 1 tablespoon hot water
- 1 teaspoon agave syrup
- 1 tablespoon reduced sodium, gluten-free soy sauce
- 1-inch fresh ginger root, peeled, shredded
- 1 clove garlic, minced
- 1 teaspoon vegetarian Thai green curry paste (i.e., Thai Kitchen )
Instructions
- In a small dish, whisk together peanut butter, coconut milk beverage, hot water, agave, and soy sauce until smooth and creamy.
- Stir in ginger, garlic, and Thai curry paste.
- Serve with salads, grain bowls, pasta dishes, lentil patties, veggie balls, and marinated tofu or tempeh.
- May store in a covered container in the fridge for up to 2 weeks.
