I’m sharing my fabulous recipe for Strawberry Coconut Energy Bites for every one in your family, from kids to adults. These nutritious and delicious power bites include unsweetened strawberry applesauce, oats, chia seeds, cinnamon, dates, almond butter, and coconut in the recipe, bringing you a great source of healthy, whole plant foods in every bite.

Just whizz the ingredients together in a food processor, roll them in coconut, and enjoy! These power balls—filled with healthy carbs, fats, protein, vitamins, minerals, and antioxidants—are perfect for healthy snack time, lunchboxes, and post workout.

Description

These delicious, healthy, plant-based, gluten-free Strawberry Coconut Energy Bites are packed with flavor and nutrients, with no added sugars.

Ingredients

  • 1 cup old-fashioned oats
  • 2 tablespoons chia seeds
  • ½ teaspoon cinnamon
  • ½ cup shredded coconut, unsweetened, divided
  • 1 4-ounce container strawberry applesauce, unsweetened
  • 10 small dates, pitted
  • 1/3 cup creamy almond butter (or peanut butter)
  • 1 teaspoon vanilla

Instructions

  1. Place oats, chia, cinnamon, and ¼ cup coconut in the container of a food processor. Process for a few minutes, until ingredients are finely ground.
  2. Add strawberry applesauce, dates, almond butter, and vanilla and process until smooth. May need to stop and scrape down sides while processing (makes a thick batter).
  3. Pour mixture into a bowl and chill for about 1 hour.
  4. Remove from refrigerator and form into small balls by shaping them with your hands.
  5. Place 1/4 cup coconut on a dish and roll each ball into the coconut.

    Refrigerate until serving time. Store in an airtight container.
