This Purple Power Blueberry Smoothie is packed with powerful antioxidant compounds, by way of blueberries, spinach, flax seeds, ginger, and soymilk. Plus, I love adding blueberries to smoothies because their royal purple shade and naturally sweet flavor can overshadow the strong tastes of added greens. Everyone will love this added sugar-free, 100% plant-based (vegan), gluten-free smoothie, from kids to adults.

With only 5 ingredients, you can whip up this smoothie in 5 minutes. It’s nutritious enough for a light breakfast or healthy snack.

Description

Make up this plant-based, antioxidant-rich, royal purple smoothie—filled with blueberries, flax, ginger, and spinach—with only 5 ingredients in 5 minutes.

Ingredients

  • 1 cup frozen blueberries (may use fresh)
  • 1 cup packed spinach leaves (may use frozen)
  • 2 tablespoons flax seeds, ground
  • 1 1-inch piece of fresh ginger
  • 1 1/2 cups soymilk, plain, unsweetened

Instructions

  1. Place blueberries, spinach, flax seeds, ginger, and soymilk in container of a small blender.
  2. Process for about 2 minutes, until smooth and creamy.
  3. Pour into a 16 ounce glass and enjoy!
  4. Makes 1 serving (2 cups each)
