Description

These completely plant-based, healthy kid (and adult) friendly bars are very low in added sugars, plus they are packed with whole grains, seeds, and fruits.

Ingredients

  • 2 (4-ounce) cartons or packages of berry applesauce (or 1 cup)
  • 1/2 cup tahini
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour (may use gluten-free flour blend, if desired)
  • ½ cup old-fashioned oats
  • 1 tablespoon ground flax seeds
  • 1 1/2 teaspoons baking powder
  • Pinch salt
  • 1/3 cup berry fruit spread
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350 F.
  2. Place berry applesauce, tahini, maple syrup, vanilla, flour, oats, flax seeds, baking powder, and salt in the container of a food processor or high-powered blender. Process until smooth—about 2-3 minutes.
  3. Spray a 9 X 9-inch baking dish with nonstick cooking spray. Pour batter into pan and spread it evenly in the pan.
  4. Place fruit spread/jelly in a small dish and mix in water until smooth. Spoon over batter evenly and place pan in the center of the oven.
  5. Bake for about 40-45 minutes, until fork inserted in center comes out clean.
  6. Remove from oven and let cool for about 10 minutes.

    Slice into 9 bars.
