Celebrate summer with this easy, plant-powered, healthy Cucumber Tomato Onion Salad, featuring only 5-ingredients (not including pantry staples). These summer veggies—cucumbers, tomatoes, onions, and basil—are available straight from your garden, farmers market, or CSA. Best of all, this health tomato salad with basil can be whipped up in only 5 minutes. I love this simple, quick, no-fuss salad as an accompaniment to sandwiches, chili, or veggie-burgers.

It’s also a wonderful filling for wraps, pita sandwiches, burritos, and tacos. Serve it at your next picnic, party, or weeknight meal in a cinch.

With a fresh, light 3-ingredient vinaigrette, the flavors of the cucumbers and tomatoes shine right through. This is my go-to way to get rid of a bumper crop of summer produce—namely cucumbers and tomatoes—which grow profusely in my garden in the summertime. It’s also a great way to showcase summer fresh produce you pick up at the farmers market or supermarket.

Ingredients

  • 2 small cucumbers (i.e., Persian), sliced
  • 5 medium tomatoes, chopped
  • ½ red onion, sliced
  • ¼ cup fresh basil, sliced
  • ½ lemon, juiced
  • 1 tablespoons extra virgin olive oil
  • Optional: Salt and pepper to taste
