Roti ingredients

Here’s a breakdown of what you’ll need to craft soft and delightful flatbreads:

  1. Whole Wheat Flour: The heart and soul of roti, whole wheat flour (atta) provides the base for that wholesome and nutty flavour.
  2. Water: Simple, yet crucial! Adding warm water to the flour helps form the dough and activates the gluten for a soft texture.
  3. Dash of Salt: Just a dash is enough to enhance the taste and balance the flavours in your roti.

How to make roti

Step 1: Start by combining whole wheat flour, carom seeds, salt and warm water in a mixing bowl. Warm water helps to activate the gluten in the flour, resulting in a softer and more pliable dough.

You can use a stand mixer for mixing – if you prefer. Step 2: Transfer the dough to an airtight container and rest in the fridge overnight. This makes it easier to roll out because the dough is less sticky. Step 3: Dust the surface with flour and divide the dough into eight small balls. Step 4: Prepare the Dough: Take each dough ball and roll it in your hands to make it smooth and ready for rolling. This step ensures a soft and consistent texture. Step 5: Coat the Dough Ball: Take one ball and coat it generously with flour, making sure to cover all sides. This will prevent sticking and ensure smooth rolling of the roti. Step 6: Roll evenly into a 6-inch roti for consistent cooking and uniform puffing.

Remember to lightly flour the roti on both sides as you roll them out to maintain smoothness. Avoid adding too much flour. Step 7: Make sure the tava or skillet is adequately heated before placing the rolled-out roti on it. A hot surface helps the roti cook evenly and prevents sticking. Step 8: Cook each roti for a few seconds on each side until it puffs up. Use a clean kitchen towel to press the roti down gently, helping it poof up for that soft and fluffy goodness.

Your roti should end up with beautiful golden brown spots. Serve immediately – hot off the tave.

Cooking method tip to achieve perfectly soft roti

Avoid Overcooking: Be mindful not to overcook the roti, which can lead to a dry and tough texture. Cook the roti until it just puffs up and develops golden brown spots on both sides.

Food safe storage

Enjoy Fresh & Warm: This oil-free roti is best savoured immediately, fresh off the tava. For small batches, keep them covered by wrapping the cooked rotis in a clean kitchen towel.

However, they will lose their softness as time passes.

Storage Tip: If you need to store Indian roti, adding a touch of oil or ghee prevents them from drying out.

Commonly ask questions (you asked)

Why is my roti never soft?

Ever wondered why your roti isn’t as soft as you’d like? I’ve been there too, and through my roti-making journey, I’ve discovered a few troubleshooting areas that made all the difference.

  • Insufficient Kneading: Not kneading the dough thoroughly can affect its elasticity and softness.
  • Uneven Rolling: Rolling the dough too thick or thin may result in uneven cooking, affecting the softness of the roti.
  • Mastering the Art: By paying attention to cooking time, kneading, and rolling, you can achieve that perfect softness in your roti with practice and precision.

Roti vs. Chapati – Unraveling the distinction

While the terms “roti” and “chapati” are often used interchangeably, there are subtle differences between these two beloved Indian flatbreads. Let’s delve into what sets them apart:

Roti:

  • Roti is a generic term for flatbreads in Indian cuisine, encompassing a wide range of regional varieties.
  • It is typically made with whole wheat flour (atta) and water without the addition of oil or ghee.
  • Roti tends to be softer and thinner, making it ideal for pairing with curries and gravies.

Chapati:

  • Chapati is a specific type of roti commonly prepared in North India.
  • It is made with whole wheat flour (atta), water, and sometimes a touch of oil or ghee for added richness.
  • Chapatis are usually slightly thicker and more substantial, making them a popular choice for various Indian meals.

Both roti and chapati share a common heritage and are enjoyed throughout India, adding nourishment to diverse culinary experiences.
