There is nothing like a simple, rustic fruit galette to showcase your supply of fruit. This Plum Galette recipe offers a healthy touch. This recipe is vegan, includes fruits and whole grains, and is very low in added sugars and salt. But this gorgeous plum galette is loaded with flavor, because it showcases the beauty of seasonal plums.

Plum recipes are among my favorites, as they offer such a rich, sweet flavor and deep color. I have a Santa Rosa plum tree growing in my orchard in Ojai, so the fruit for this recipe came from my tree. But you can easily find plums in supermarkets and farmers markets in your community in the summertime, too. One of my favorite ways to do desserts is through fruit-forward recipes, as you let the naturally sweet flavor of the fruit sweeten the dessert, and you gain such natural flavor and nutrition as a side benefit.

Feel free to substitute any fruit for the plums, such as apricots, peaches, apples, pears, and berries. This recipes makes two individual small galettes–each serving 4. But you can also make one large galette using this recipe.

What is a Galette?

Galette is a French term for a pastry based dish. It has become known as a dish using galette dough with the filling piled in the center, and the pastry folded up along the edge.

Galette recipes can be sweet or savory, and they can often contain a fruit filling. This is a completely vegan recipe, which eliminates eggs and dairy products that are often incorporated into galette recipes. You can make a gluten-free option by using gluten-free flour.

Description

This vegan Plum Galette is easy and light in added sugars and refined grains, yet it’s brimming with flavor!

Ingredients

Galette Dough:

  • ¾ cup all-purpose wheat flour
  • ½ cup white whole wheat flour
  • 2 tablespoons brown sugar
  • Pinch salt (optional)
  • ½ cup chilled vegan butter sticks (i.e., Miyoko’s Creamery, Earth Balance), cut into cubes
  • 3 tablespoons ice water

Plum Filling:

  • 7 large ripe plums, unpeeled
  • 2 tablespoons brown sugar
  • 2 tablespoons corn starch
  • ½ teaspoon cinnamon

Topping:

  • ¼ cup slivered almonds
  • 1 teaspoon brown sugar
  • ½ teaspoon cinnamon

Instructions

  1. To make the dough, place the all-purpose flour and white whole wheat flour in a mixing bowl (or bowl of a standing electric mixer). Add brown sugar and salt.

    Blend with an electric mixer on low setting until dry ingredients are well combined.

  2. Add the chilled, cubed vegan butter and mix on medium setting until dough becomes crumbly.
  3. Sprinkle evenly with ice water and blend again for 1-2 minutes (do not overmix) until it creates a smooth dough that pulls away from the sides of bowl.
  4. Divide bowl into two equal round balls and place them in the refrigerator to rest for 30 minutes.
  5. Meanwhile, prepare plum filling. Slice plums into thin slices (leaving peels on, but removing pits) and add to a medium mixing bowl.
  6. Mix the brown sugar, corn starch, cinnamon into the plums, and stir well.
  7. Remove the dough from the refrigerator. Place a square section (about 8 inches) of parchment paper on the counter, and place one dough ball in the center of the paper. Roll out the dough with a floured rolling pin in a circle shape, until dough is thin and creates a 6-inch diameter circle.

    Repeat with the second dough ball.

  8. Preheat oven to 400 F (205 C).
  9. Place the dough circles on parchment paper on a baking sheet.
  10. Divide the plum filling among the two dough circles. Spoon the plum filling over the dough, leaving about a 1-inch border along the outside of the dough circle. If there is juice from the plums left in the bowl, do not use it. Repeat with the second dough circle.
  11. Sprinkle the galettes evenly with toppings: almonds, brown sugar, and cinnamon.
  12. Place the filled crusts with plum filling in the oven on the top rack and bake for 25-30 minutes, until golden brown.
  13. Remove, slice each galette into 4 slices, and serve immediately.

Notes

Alternatively, you can make one large galette with this recipe by rolling the dough in step 10 into one large circle or oval shape (about 12-inches in diameter).

Use all of the plum filling and toppings on one galette, instead of dividing them among two.

Make this recipe gluten-free by using a gluten-free flour blend instead of the all-purpose and white whole wheat flour.
