Looking for a healthy Halloween recipe? This recipe for Jack O Lantern Stuffed Peppers with Spicy Kidney Bean Salad is just what the doctor (and ghoul) ordered! It’s tough to find truly healthy Halloween recipes. Many times Halloween recipes focus on sweet treats for an already sugar-overloaded holiday, right?
That’s why I’m always on the lookout for festive Halloween ideas that are also healthy and can be part of a meal. I created these super easy vegan, gluten free Jack O Lantern bell pepper shells, which can be filled with a super quick and easy kidney bean salad. Based on mostly pantry foods (kidney beans, corn, garlic, spices, EVOO), along with cherry tomatoes, cilantro, jalapeno, and lime juice, you can toss this protein-rich, high-fiber spicy bean salad together in minutes. Then carve your bell pepper Jack O Lanterns lickety split.
Just slice off the “lid” and carve your favorite eyes and mouth in each bell pepper, choosing your favorite colors, such as red, orange, green, yellow and even purple. Fill those peppers with bean salad, drizzle with vegan sour cream and serve on a bed of lettuce. You can place the stuffed peppers on a platter, or individual salad plates. Just slice into the peppers, and enjoy!

Step by Step Guide:
Here’s all you need to make this stuffed pepper recipe.Just mix up a spicy kidney bean salad with canned kidney beans, corn, cherry tomatoes, cilantro, green onions, jalapeno, chili powder, lime juice, and EVOO. Slice the “lid” off each bell pepper. Carve eyes (triangles work great) and a mouth into the pepper with a paring knife. Fill with spicy kidney bean salad and top with vegan sour cream and more cilantro and serve on a bed of lettuce.

Ingredients
Kidney Bean Salad:
- 1 (15-ounce) can kidney beans, rinsed, drained
- 1 cup corn (frozen, defrosted or canned, drained)
- 1 cup halved cherry tomatoes
- ½ cup chopped fresh cilantro
- 3 green onions, sliced
- ½ jalapeno, finely diced
- ½ teaspoon chili powder
- 1 lime, juiced
- 1 tablespoon extra virgin olive oil (optional)
- ¼ teaspoon salt (optional)
Peppers/Topping:
- 4 large bell peppers, mixed colors (orange, green, red, purple, yellow)
- ¼ cup vegan sour cream
- 1 tablespoon chopped cilantro
- 2 cups baby salad greens
Instructions
- In a large bowl, add kidney beans, corn, cherry tomatoes, cilantro, green onions, jalapeno, chili powder, lime juice, olive oil (optional) and salt (optional).
Gently mix together to combine.
- Prepare bell pepper jack O lanterns by slicing the top portion (stem end) of each bell pepper about 1 inch below top to create a “lid” or top of the jack-o-lantern.
- Scoop out inside of the bell pepper, including seeds and fibers to create a shell.
- With a paring knife, cut two triangles for the eyes, and a mouth with teeth in whatever shape you desire. Press out the bell pepper pieces to create openings for the eyes and mouth.
- Fill each pepper with filling (about 1 cup per pepper). Drizzle with vegan sour cream and sprinkle with additional cilantro. Add “lid” to each bell pepper.
- May serve on a bed of lettuce or a platter.
