Okay, so dessert time at our place is always a blast. We’re all about keeping it fun and delicious, whether we’re whipping up Bliss Balls or diving into a Yogurt Bark frenzy.

But lately, I’ve been obsessed with this dessert recipe.

Let me tell you, this galette? It’s a crowd-pleaser, like, it gets rave reviews every time I serve it up—from the hubby to the three cheeky monkeys, everyone’s digging into it and leaving none for me.

Oh, and make sure to top it off with a scoop of ice cream—it’s the cherry on top!

Nutrition highlights

Let’s chat through some nutrition tidbits:

  • Rich in vitamin C, courtesy of the fresh strawberries and peaches.
  • Provides dietary fibre, supporting digestive health.
  • The use of filo pastry keeps the dessert lighter in calories compared to traditional pastry crusts.

Ingredients

The list isn’t hefty—just a few simple ingredients to bring this delightful sweet recipe to life.

  • Ready-made filo pastry
  • Butter
  • Fresh peaches
  • Fresh strawberries
  • Coconut sugar
  • Corn starch
  • Vanilla extract
  • Cardamom from pods

How to make it

Step 1: Preheat Oven

  • Preheat your oven to 180°C (350°F).

Step 2: Prepare Fruit Filling

In a mixing bowl, combine peaches and strawberries with coconut sugar, cornstarch, vanilla, and cardamom. Mix well and place in the fridge until it’s time to assemble.

Step 3: Layer Filo Pastry

Lay out 8 sheets of filo pastry and slice them lengthwise into three equal strips using a pizza cutter. Take one strip of filo pastry, place it on a baking tray, and lightly brush it with melted butter.

Be careful not to overdo it—keep the butter layer thin.
Take another filo strip, lay it at an angle over the buttered strip, and gently brush it with butter. Repeat the process with the remaining filo strips, overlapping them to create a wheel. Fold the edges of the filo pastry snugly to create a border, ensuring enough space in the center for the filling.

Step 4: Assemble the Galette & Bake

Spread the prepared fruit mixture evenly over the center of the layered filo pastry. Bake for 40 minutes (middle oven shelf), or until the pastry is crispy, golden brown and cooked through.

Serve:

Allow the galette to cool slightly before slicing and serving with a dollop of your favourite vanilla or coconut ice cream.

For a complete list of ingredient measurements and detailed step-by-step instructions, you can find everything you need in the printable recipe card located at the bottom of this post.

Baking tip for Newbies

To keep your filo pastry layers moist and easy to work with, wrap the stack in a lightly moistened clean kitchen towel.

This helps maintain their pliability for smooth folding and assembling in your recipes.

How do you keep the bottom of a galette from getting soggy?

To keep the bottom of your galette from getting soggy, I mix the fruit filling with cornstarch. It helps absorb excess moisture during baking, ensuring the crust stays nice and crisp.
