Hear me out: I think that cabbage deserves to be a salad green more often, just like its cousin kale. It’s affordable, nutrient-dense, satisfyingly crunchy and keeps for AGEs so you won’t end up with a mysterious mush in the back of your produce drawer if you forget about it for a day or two.

And I can’t think of a better way to eat it than slathered in an herby, creamy green goddess dressing so good you’ll want to put it on everything. Don’t call this a slaw: this vegan green goddess salad is such a good side salad for picnics, BBQs and potlucks but you can also make it a satisfying lunch or dinner served with a protein like my tofu skewers.

A couple of prep notes from my home kitchen

This easy cabbage salad is my take on the viral green goddess salad recipe but I’ve shredded the cabbage for a lighter, crisp texture that’s actually a lot easier to prep (and eat!) but you can finely chop the cabbage too if you prefer.

You can use any green cabbage you have, but I love Savoy cabbage because it looks so pretty when shredded.  If you want a heavier crunch, you can chop the cabbage and snap peas, but when shredded, they yield a more tender crispness that’s no less satisfying!

Nutrition Note: okay, dietitian me needs you to know that this salad is naturally vegan, nut free and gluten free and even low FODMAP, as long as you omit the chickpeas! Which makes it so good for gatherings because more folks can enjoy it, no matter their dietary needs.

  • 4 cups shredded green cabbage, I like to use Savoy
  • 2 cups snap peas, thinly sliced on the diagonal
  • 1 14 oz can chickpeas, drained and rinsed, skip for low FODMAP
  • 2 green onions, dark green tops only, thinly sliced
  • 1 batch vegan green goddess dressing, although I highly recommend a double batch if you'll have leftovers!
  • Place the cabbage, snap peas, green onions and chickpeas in a bowl and toss well with the green goddess dressing.

  • This salad keeps well, and the flavour gets better if you let it sit at least 15 minutes before serving!

Low FODMAP notes: Snap peas and savoy cabbage are both low FODMAP in a ¾ cup serving. So if you stick to a cup of salad as a side dish, minus the chickpeas, it’s good for a low FODMAP diet.

And technically, you could actually add the chickpeas and keep it low FODMAP. 1/4 cup chickpeas is a low FODMAP serving!!    Also, if you want to serve this as a main dish salad with a protein, you’ll be able to serve 4 people.  Crunchy, creamy and high fiber, this flavourful vegan green goddess salad has it all!
