I am 100% a nutrition nerd, and always will be. And this delicious edamame salad is a perfect example of me reverse engineering a recipe to give you what you need while also loving what you eat. Edamame is such an underrated food because it’s got plenty of protein, fiber and minerals like iron plus it’s pretty affordable and very easy to add to your favourite recipes.

This meal prep-friendly salad has all-of-the-things: creamy avocado for healthy fats, antioxidant rich broccoli and carrot for crunch plus a juicy sesame ginger dressing, bursting with fresh lime and ginger, so it tastes fresh and not too salty.

How to make an actually high protein edamame salad

As a dietitian, it’s super important to me to be clear on the nutritional stuff…because there’s a lot of “protein-packed” edamame salads out there buuuuuut the servings aren’t always big enough to actually be a high protein meal as advertised. 

So let’s set it straight: this sesame ginger edamame salad serves 4 as a side dish salad, with 12g protein and 9g fiber per serving. OR, it serves 2 as a meal prep lunch with 24g protein and 18g grams fiber so it meets my nutritional standards for a high protein recipe.

If you’d prefer to add a satisfying grain to extend the salad, you could add 4 cups cooked quinoa to make 4, more filling, lunch serves. I designed the recipe with hardy vegetables that keep well for 3-4 days.

There is enough lime in the dressing to help preserve the avocado, if you add it as the first layer. But for the freshest, firmest avocado, just add just before serving.

This salad is naturally vegan, gluten free and nut free, so it makes a great potluck salad too! You can even make it low FODMAP with a couple of swaps that I’ve popped into the recipe card!

  • 3 cups frozen shelled edamame, you need at least a 350g bag
  • 2 cups finely chopped broccoli , about 1/2 – 3/4 inch florets
  • 1 medium avocado, chopped, see notes for low FODMAP swaps
  • 1 large carrot, julienned
  • 2 tablespoons sesame seeds
  • 1 green onion, very thinly sliced on the diagonal
  • 1 batch sesame ginger dressing

Optional serving ideas

  • 1 cup salted cashews, chopped, for more crunch!
  • 4 cups cooked quinoa, if you want to extend the salad into 4 lunch servings
  • Cook shelled edamame according to package directions. Typically, that’s boiling frozen edamame for 5 minutes. Rinse well with cool water.

  • Toss all of the ingredients in a medium salad bowl with half the dressing, serve with the remaining dressing.

  • If you want to make 4 salad jars for lunches, layer the dressing in the bottom of 4 jars, and layer in the vegetables, then the quinoa. You can leave out the avocado or, if you don't mind it a bit squishy, I make it the first layer after the dressing so the lime in the dressing preserves the avocado.

Remember, this salad can also be enjoyed as is, as 2 lunch sized servings!  Here is the low FODMAP swaps: 1.

The salad is low FODMAP as a side dish, by just omitting the cashews, the garlic in the dressing and using only the dark green tops of the green onion. The avocado is a low FODMAP serving.
2. The salad is low FODMAP as a lunch serving if you omit the cashews, the garlic in the dressing, use only the dark green tops of the green onion AND either add quinoa to make 4 serves OR ensure that you only add 1/2 medium avocado or less to your salad. Avocado is low FODMAP in an 80g (1/2 medium) serve.
