So thick you could use it as a dip. So creamy, it turns a chopped salad into a treat! This blended avocado lime dressing is super simple (but never bland!) with tangy lime and just a hint of cumin…but no cilantro, because I know not everyone likes it.

I’m a one woman sauce fan club, and I take my sauces and dressings seriously…but that doesn’t mean they need to be complicated. Actually, when you get the balance of salt and acid right, the richness of avocado becomes a whole universe unto itself.
So when I wanted a really good dressing for my black bean crunch salad, this is what I made.
Because this dietitian knows that healthy without delicious misses the point.
Fresh, tangy lime is the perfect counterpoint to rich avocado, so it still feels fresh and light even though it’s rich in healthy fats and fiber. And it takes just 3 minutes to whip up so the next time you see a ripe avocado languishing on your counter, make this easy vegan dressing and watch your salad get gobbled up.
How to make a bright, tangy and NOT boring avocado lime dressing
With only 4 ingredients, plus oil and salt, there is literally nowhere for bad flavour to hide. So let’s talk through a few important ingredients notes so your creamy avocado dressing tastes delish.
The first is that a ripe avocado is a buttery avocado… …underripe fruits will taste more green in this dressing.Second…maybe the most important point…don’t use extra virgin olive oil to make this dressing. I recommend avocado oil or another neutral oil here because olive oil can get super bitter when blended.
Why? Blending breaks the emulsion and releases the bitter polyphenols in good olive oil.
It will ruin your dressing…I learned this the hard way when I was developing the recipe for my (now) avocado oil mayo in my Eat More Plants book. I tried olive oil first and it was actually disgusting.
And finally, don’t skimp on the salt. Fat needs salt to fully realize its flavour potential.

Creamy Blended Avocado Lime Dressing
1 cup (approximately)
Prep Time: 3 minutes mins
Total Time: 3 minutes mins
So thick you could use it as a dip. So creamy, it turns a chopped salad into a treat!
This blended avocado lime dressing is super simple (but never bland!) with tangy lime and just a hint of cumin…but no cilantro, because I know not everyone likes it!
Pin Print- 1 medium ripe avocado
- 3 tablespoons fresh lime juice
- 1 tablespoon avocado oil, or other neutral oil
- ½ teaspoon salt
- ¼ teaspoon ground cumin
- ½ – 1 teaspoon maple syrup, to taste
If needed, to thin
- avocado oil, or more lime juice, if it could use brightening!
Blend everything in a bullet blender, or wide mouthed jar with an immersion blender, until creamy, about 30 seconds.
Taste and adjust maple syrup or salt if needed.
I designed this dressing to be thick for chopped or kale salads, but you can thin it out for lettuce salads, just don't use water!
Adding too much water will make the dressing super bland…I definitely recommend using oil!
With just the right balance of fat, acid and salt, this simple avocado lime dressing is super tasty!Disclaimer: This story is auto-aggregated by a computer program and has not been created or edited by evesfit.
