Anyone who knows me understands that I love a good smoothie. I make one for someone in my family nearly every single day, and I often enjoy one as a healthful, satisfying snack too. I can pack in fruits, veggies, and an extra dose of plant-based protein into our busy days. The nutritional lineup of this Caribbean Sunset Protein Smoothie is packed with protein, vitamins A and C, fiber, phytochemicals, and more.

Plus the smoothie is just downright delicious. You won’t even notice a whole serving of vegetables go down in this smoothie, which comes via one carrot tossed into the mix.

This recipe includes only 6 ingredients: protein powder, coconut milk beverage, orange juice, mango, and carrots.

The combination of ingredients gives it a beta-carotene antioxidant rush, plus a tropical flavor and gorgeous shade the color of a Caribbean sunset. Vary the color with the type of carrots you use. For this Caribbean Sunset Protein Smoothie, you can also use heirloom purple carrots to give it an orange-pink shade.

With only 5 ingredients, you can whip up this smoothie in seconds as a great start to your morning, snack in between meals, fuel for your workout, or evening pick me up to satisfy your sweet tooth.

It makes one large serving—just enough to fill an individual smoothie blender, like a NutriBullet. Try swapping out pineapple or papaya for the mango, or cooked squash or sweet potatoes for the carrots. You’ll still get a bonus of nutrients and a different flavor profile. Enjoy!

Description

This plant-based smoothie is packed with nutrition and tropical fruits—make it with 6 ingredients in under 5 minutes

Ingredients

  • 1 scoop (30 grams) plant-based protein powder of your choice
  • 3/4 cup coconut milk beverage, plain
  • ¼ cup orange juice
  • 1 cup frozen chopped mango
  • 1 medium carrot (purple, yellow, or orange), sliced into chunks

Instructions

  1. Place all items into the container of a blender (fits perfectly into an individual smoothie blender).
  2. Process for 2 – 3 minutes until all contents are smooth.
  3. Pour into a large glass and enjoy!
