Description

With just 4 ingredients, not including pantry staples, you can make the most delicious, healthy, plant-based, gluten-free roasted, golden-brown sweet potato wedges, perfect pairing for just about any meal.

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs of your choice (i.e., basil, sage, oregano, cilantro, parsley; or use 1 tablespoon dried)
  • Freshly ground black pepper, as desired
  • Sea salt, as desired (optional)

Instructions

  1. Preheat oven to 375 F.
  2. Peel the sweet potatoes and slice them into strips about 1-inch thick.
  3. Place the sweet potatoes strips on a baking sheet.
  4. Drizzle with extra virgin olive oil and balsamic vinegar.
  5. Sprinkle evenly with garlic and herbs.
  6. Season with black pepper and salt as desired.
  7. Toss with tongs to distribute the seasonings, oil, and vinegar.
  8. Bake for about 30 minutes, until golden brown and tender.
  9. Serve immediately. Makes 4 servings.
