Easy Soy Yogurt Berry Parfait

Easy Soy Yogurt Berry Parfait

One of my favorite, go-to breakfasts, snacks, and even desserts is this easy soy yogurt berry parfait. This vegan, gluten-free yogurt parfait is healthy enough—it’s rich in protein, fiber, vitamins, minerals, phytochemicals—that you can enjoy it for a meal, and it’s tasty enough for a dessert you can feel really good about. Plus, if you make it up in a mason jar, you can tote it along to work or school—no trash involved! Best of all, you can make up this recipe in 5 minutes with only 3 ingredients!

It’s great for kid’s lunch boxes, take along breakfasts, and meal prep too. Get creative by mixing up the berries—try strawberries, blackberries, blueberries, raspberries, marionberries and more. You can use fresh when they are in season, or frozen in the off season too. And try some of my favorite granola recipes, such as Ginger Peach Sunflower Granola and Fresh Orange Spice Granola for this recipe, or use your favorite brand at the supermarket.

Enjoy!
