Description
Make this Easy Vegan Mayonnaise, which is also gluten-free, light, and delicious, in just 5 minutes with ingredients you probably have in your kitchen now!
Ingredients
- ½ cup soymilk, unsweetened, plain (or another mild-flavored, full-bodied plant milk, such as oat)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 cup extra virgin olive oil
- Pinch sea salt
- Pinch white pepper
Instructions
- Place soy milk, lemon juice, Dijon mustard, extra virgin olive oil, sea salt, and white pepper into the container of a small blender (using an immersion blender with tall mixing container can work well for this too).
- Process the ingredients in the blender for about 3-4 minutes, until very smooth and thickened.
- Transfer to an airtight container, cover, and chill. Mixture will thicken as it chills. Makes a smooth, light mayonnaise with a yogurt-like consistency.
- Store in the refrigerator for up to 2 weeks.
- Serve as a spread on sandwiches or as a dressing on salad. Use this as a substitute for any recipe that calls for “mayonnaise”.
