Description

This super easy, sunny recipe for Ginger Peach Sunflower Granola will brighten up any morning. Filled with sunflower seeds, sunflower butter, ground ginger, dried peaches, and oats, this recipe is light in added sugars, contains no oils, and is packed with nutrition power, including heart-healthy natural fats and whole grains.

Ingredients

  • 6 cup oats
  • ½ cup sunflower seeds, raw
  • ½ cup shredded coconut, unsweetened
  • ¼ cup hemp seeds
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ½ cup sunflower seed butter
  • 1 medium orange, juiced
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla
  • 1 cup dried peaches, chopped

Instructions

  1. Mix oats, sunflower seeds, coconut, hemp seeds, ginger, and cinnamon in a large mixing bowl.
  2. Preheat oven to 350 F.
  3. Mix sunflower seed butter, juice, maple syrup, and vanilla in a small pot and heat over medium, stirring until smooth and bubbly (or place in a microwave-safe dish and heat for 2 minutes until warm).
  4. Remove pot from heat, stir well until smooth, and pour into the oat mixture, tossing until well distributed. Stir well.
  5. Spread out granola mixture evenly onto a baking sheet.

    Place in oven on the top rack.

  6. Bake for about 20 minutes, stirring every five minutes, until golden brown.
  7. Remove, cool, and mix in dried peaches.
  8. Store in an airtight container.
  9. Makes about 8 ½ cups (18 approximately ½-cup servings)
