If you’ve been paying attention, you’ll know that dessert-flavoured overnight oats are kind of my thing…because the honest truth is that these days, if I don’t have an appealing breakfast all ready to go in the morning, I’m way too likely to skip it altogether.
That’s actually a kind of embarrassing thing to admit given that I’m a dietitian, and I know better!!
Skipping meals messes with your gut and your blood sugars, and a proper breakfast makes it so much easier to meet your nutrition goals. But mornings are just so jam-packed with kids and lunches and I just can’t be bothered to think through making a balanced breakfast. And I think it’s my job to make it easier for you to eat well, no matter how busy you (and I!) are.
So an easy meal prep breakfast means I can just grab a solid breakfast out of the fridge before I start work with minimal effort (5 min!) the night before.
And these cookie dough overnight oats are IT: soooo satisfying, with actual chocolate chip cookie dough flavour and a solid amount of protein – 23.5g! – plus 16.5g of gut-loving fiber.
The only thing this breakfast doesn’t have?? Fruits or veggies. So enjoy it with an apple on the side, some berries on top, or whip up a batch of my green blender juice to sip on midmorning to balance it out.

A few testing notes for these chocolate chip cookie dough overnight oats
When I say something tastes like cookie dough, I mean it…I tested 6 different versions of this recipe to get it right.
Because chocolate chip cookie dough actually has a nice savouriness to it…and other versions I tried tasted too much like sugar cookies because of the amount of vanilla and almond extract in them.
A rich milk like soy milk helps tone down the peanut butter flavour…if you use something thin like almond milk, it will probably taste more like peanut butter.The winning combo for me was more peanut butter – bonus, more fiber and protein – plus salt to give you that richness plus just a tiny amount of almond extract and cinnamon to bring out those cookie notes so it tastes like a chocolate chip cookie, not a peanut butter cookie.
You could easily make a large batch of this, in a bowl, for the family, or for the week. It will keep super well! Pin Print- 1 cup unsweetened soy milk, sub hemp milk for low FODMAP
- 2 tablespoons natural peanut butter
- 1 tablespoon maple syrup
- ⅛ tsp almond extract
- ⅛ tsp cinnamon
- pinch salt
- ⅓ cup rolled oats
- 2 tablespoons chia seeds
- 1 tablespoon mini chocolate chips
- 1 tablespoon finely chopped walnuts, optional, if you're a walnut in your cookie person!
Blend the soy milk, peanut butter, maple, almond extract, cinnamon and salt in a bullet blender or using an immersion blender.
Add rolled oats, chia seeds and mini chocolate chips to a 500ml jar.
Pour in the liquid and stir well. Wait one minute, and stir again to help minimize chia seed clumping.
All of my overnight oats have a more fluid texture because I don't like them super thick. If you like thick overnight oats, use 3 tbsp chia seeds OR increase oats to 1/2 cup.
