I love to make roasted sweet potatoes wedges; their sweet, earthy flavors and gorgeous sunny-orange shade make them the perfect pairing for just about any meal. Added bonus: kids love them. Plus, they’re so easy! Sweet potatoes are a great, healthy addition to your diet, as they are packed with fiber and vitamin A.

And roasting them with just a small amount of EVOO until they are golden brown is the perfect way to let the natural flavors and benefits of this tuber to shine. I’m sharing my easy step-by-step guide for How to Make Roasted Sweet Potato Wedges to make this an easy fool-proof addition to your meal plan.

Step-By-Step Guide: How to Make Roasted Sweet Potato Wedges

Here’s what you’ll need:
2 large sweet potatoes
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
2 cloves garlic
2 tablespoons fresh herbs of your choice (i.e., basil, sage, oregano, cilantro, parsley)
Freshly ground black pepper
Sea salt

Start with beautiful, fresh sweet potatoes, garlic, herbs, balsamic vinegar, and extra virgin olive oil. Peel and slice the sweet potatoes into strips. Place the sweet potatoes on a baking sheet.

Chop the garlic and sprinkle it on top of the sweet potatoes. Drizzle the sweet potatoes with 2 tablespoons extra virgin olive oil. Drizzle the sweet potatoes with 1 tablespoon balsamic vinegar. Chop the fresh herbs and sprinkle them on top of the sweet potatoes.

Season with black pepper and salt as desired. Toss with tongs to distribute the seasonings, oil, and vinegar. Place in an oven at 375 F and bake for about 30 minutes, until golden brown and tender. Enjoy!
