Pomegranate Rosemary Margarita

Turn to seasonal produce to inspire a fruit-forward cocktail, such as this super-easy, 5-ingredient, 10-minute batch of Pomegranate Rosemary Margarita. Shun the sugary, fake margarita mixes and use fresh lemon or lime juice, pomegranate juice, pomegranate arils, rosemary, silver tequila, and a touch of agave to flavor these super-food drinks! The fuchsia color is off the charts gorgeous, and the flavor sparkles with fresh fruit flavors. This is a great drink to serve over the holidays, during the winter, or any time of the year.

I used freshly squeezed pomegranates for juice, as well as the arils from my trees in my garden, but you can also find fresh squeezed pomegranate juice and fresh or frozen pomegranate arils (the seeds) available in many markets. Try a cinnamon sugar rim around the edges of your glass, or skip it and stick with the margarita itself.

Description

This recipe for fruit-forward, 5-ingredient, 10-minute, low-sugar Pomegranate Rosemary Margarita sparkles with bright flavors, and is based on seasonal produce, such as pomegranates and citrus.

Ingredients

Margaritas:

  • 1 cup pomegranate juice, pure, unsweetened
  • 1 cup fresh lemon or lime juice
  • 2 tablespoons agave syrup
  • ½ cup silver tequila
  • 1 cup pomegranate arils, fresh or frozen
  • 4 fresh rosemary sprigs
  • 20 small ice cubes (or 8 large ones)

Cinnamon Sugar Rim (optional):

  • ½ lemon
  • 1 tablespoon cane sugar
  • 1 tablespoon cinnamon

Instructions

  1. Place pomegranate juice, lemon juice, agave syrup, silver tequila, and pomegranate arils, and fresh rosemary sprigs in a shaker container or pitcher.
  2. Shake or mix well.
  3. If desired, rim 4 margarita or highball glasses (about 12 ounces) with cinnamon sugar. To make rim: Run a lemon half along the edge of the glass to moisten it. Mix the sugar and cinnamon together in a small dish.

    Dip the rim of each glass in the mixture and allow to dry for a few minutes.

  4. Fill each of the glasses with 5 small (or 2 large) ice cubes.
  5. Pour the margarita mixture into each glass (about ¾ cup per glass).
  6. Serve immediately. May serve with a small spoon to capture those delicious pomegranate arils.
