Ever buy a watermelon so big that you’re wondering how the heck you’re gonna fit it in the fridge, let alone finish it off? I’ll let you in on a little secret….watermelon freezes LIKE A DREAM.

Which is helpful, because my family are experts in ignoring all the fresh fruit I buy until it’s within an inch of the compost bin. Unless, however, I freeze it. 

Then my kids gobble it up like it’s actual candy.

Seriously: they’ll help themselves to bowls of frozen fruit while ignoring the fresh produce. So I’ve gotten into the habit of freezing at least half of the grapes, berries and watermelon I buy in a thinly veiled attempt to get them to eat more. I am a dietitian after all…

Sometimes I freeze them straight up, other times, I’ll give them a little glow up. I’ll turn blueberries into blueberry basil popsicles. I’ll turn strawberries into creamy strawberry sorbet.

And I’ll also toss watermelon with lime juice and call it sour watermelon candy.

To be honest, I can’t stop eating this either…it’s the kind of thing I find myself grabbing a piece of whenever I pass the freezer (which, given that I work from my kitchen table is OFTEN ha!).

A couple of kitchen notes about this sour frozen watermelon

This one is so easy you almost don’t need a recipe…it’s just two ingredient and a couple minutes of chopping. Of course, a wee note on how to maximize flavour doesn’t hurt!

First things first: the sweeter the watermelon, the sweeter the snack. Look for a round watermelon with dark green stripes and a nice yellow spot on it.

It should be heavy for its size!

I love this recipe because watermelon is so, so good for you – super hydrating, packed with vitamin A carotenoids for healthy skin and immunity. Watermelon is also the richest source of a special amino acid called citruline for heart health!

Got stuck with an unsweet dud? …stir 1-3 tsp of sugar into the lime juice to give you more of that sour candy vibe! Freeze until solid. That’s literally it…so simple!

  • 4 cups cubed watermelon, 1 inch (2.5cm) cubes
  • 1 lime, juiced

Optional, only if watermelon isn't super sweet

  • 1 – 3 tsp sugar, or granulated sweetener
  • ONLY if your watermelon isn't sweet, stir a desired amount of sugar into the lime juice in a small cup.

  • Place watermelon cubes in a medium bowl, and pour over lime juice. Toss gently with hands to ensure that watermelon is coated in juice.

  • Let sit for a couple of minutes as you line a rimmed baking sheet with parchment paper.

  • Toss watermelon again and place on baking sheet. Drizzle the remaining juices on the watermelon cubes for maximum flavour.

  • Freeze until solid, minimum four hours. Transfer to airtight container or freezer bag and enjoy within one month for maximum flavour.

FYI….this works for blueberries and grapes too!
