Combining the cool flavors of baby spinach leaves, fresh strawberries, cucumber slices, basil, and a vegan feta cheese, this fresh, earthy salad is elevated with a simple balsamic vinaigrette, which brings out the naturally sweet flavors of the strawberries. Packed with fiber, vitamin C, and powerful phytochemicals, this salad recipe delivers on nutrition, too.

This Strawberry Spinach Salad with Vegan Feta and Balsamic Vinaigrette is easy and simple enough to enjoy for a weeknight dinner, but it also translates well to picnics, potlucks, and even celebratory meals. Try serving it with crusty whole grain bread and a lentil soup to make it a meal.

Description

This Strawberry Spinach Salad with Vegan Feta and Balsamic Vinaigrette is a super light, fresh, healthy salad to enjoy at any meal. With only 6 ingredients, you can toss it together in 15 minutes.

Ingredients

Salad:

  • 4 cups packed baby spinach leaves
  • 1 cup sliced fresh strawberries
  • 1 small cucumber, unpeeled, sliced
  • 2 tablespoons fresh basil leaves, chopped
  • 1 (8-ounce) package vegan feta cheese (i.e., Violife), cubed (about 1-inch)

Balsamic Vinaigrette:

  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Pinch salt (optional)
  • Pinch black pepper

Instructions

  1. Place spinach, sliced strawberries, sliced cucumber, chopped basil, and feta cubes in a large salad bowl (about 2-quart size).
  2. Gently toss together salad ingredients.
  3. Whisk together olive oil, balsamic vinegar, salt, and pepper in a small dish until combined.
  4. Drizzle vinaigrette over the salad and gently toss to distribute dressing.
  5. Serve immediately.
