I don’t know if it’s the explosion of taste and texture or the mouthwatering aroma that fills the kitchen as you cook, but this kidney bean curry will undoubtedly captivate your senses from the very first bite.

Picture this – tender beans smothered in a rich tangy tomato-based rajma masala, mingling with the earthy spices and fresh cilantro, all coming together in perfect harmony. And just when you thought it couldn’t get any better, we add a seasonal twist – air fryer zucchini that boasts a delightful tenderness.

Rajma masala ingredients

Air fryer zucchini

  • Medium-sized zucchini
  • Olive oil
  • Chilli flakes (adjust to spice preference)
  • Cumin powder
  • Smoked paprika

Red kidney bean curry

  • Tomato sauce (homemade is best!)
  • Curry powder
  • Garam masala
  • Chilli powder (adjust to spice preference)
  • Cooked red kidney beans
  • Salt (adjust to taste)
  • Fresh cilantro

How to make it

Air fryer zucchini in 3 steps

You want to begin by preheating your air fryer to 400°F (200°C). Preheating is key to ensure even cooking.

While the air fryer is preheating, I make the most of my time in the kitchen by washing and slicing the zucchini. It’s best to cut them into rounds that are approximately 1/4-inch thick.

In my experience, this thickness works best for achieving a perfect charred exterior and tender interior.

Step 1: Drizzle olive oil and spices over the zucchini slices. Using your hands, toss the slices gently to ensure they are well coated with the oil-spice mixture. Step 2: Place the seasoned zucchini rounds in the air fryer baskets – ideally in a single layer. Crowding the basket may result in uneven cooking, so it’s best to cook the zucchini in batches if needed. Step 3: Air fry the zucchini for 10 minutes, flipping the slices. Then, air fry for another 5 minutes to ensure both sides get the perfect char.

Red kidney bean curry

Step 1: Heat homemade tomato sauce over medium heat. Step 2: Add curry powder, garam masala, and chilli powder and stir well. Step 3: Fold in the cooked kidney beans, ensuring they are evenly coated with the tomato sauce and spices.

Let the curry simmer on low heat for a few minutes to allow the flavours to meld. Step 4: Add salt and cilantro. Step 5: Finish Rajma curry by adding air fried zucchini for a seasonal touch.

  • 1 tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • ½ tsp salt sea salt
  • ¼ cup cilantro fresh, washed, finely chopped

Instructions

Air fryer zucchini

  • Preheat the air fryer to 400°F (200°C) for an even, crispy result.
  • Drizzle olive oil to coat the zucchini rounds and season with paprika, cumin, and chilli flakes.
  • Arrange zucchini in the air fryer and cook for 15 minutes; flip and air fry for another 5 minutes.

Rajma curry

  • Fold in cooked kidney beans, coating them in the sauce and simmer on low heat for a few minutes.
