Easy Raspberry Salsa

I love the sweet-tart taste of red raspberries paired with unexpected flavors, such as the spiciness of a salsa. This Easy Raspberry Salsa is super easy to whip up and oh-so-pretty at your next party! Just mix frozen raspberries (or fresh if they are in season) with lime juice, chili peppers, green onions, and cilantro, and you have a flavor pizzazz for your table. Plus, raspberries are packed with nutrition for such a skinny calorie return.

With only 5 ingredients, you can mix up this Easy Raspberry Salsa in about 5 minutes.

Just make sure you have a package of frozen red raspberries in your freezer to turn to anytime you want to create this healthy, flavorful accompaniment for chips or whole grain flatbread. This recipe is also delicious as an accompaniment to savory foods, such as lentil patties, potato hash, or veggie balls.

Description

The sweet-tart taste of red raspberries pairs with unexpected flavors like chili, green onions, and cilantro to create this gorgeous Easy Raspberry Salsa.

Ingredients

  • 1 1/2 cups frozen, partially thawed or fresh red raspberries
  • 2 limes, juiced
  • 3 green onions, sliced
  • 1 small chili pepper, finely diced
  • ¼ cup chopped cilantro
  • Pinch: sea salt, cumin and black pepper

Instructions

  1. Place raspberries in a small mixing bowl and mash slightly.
  2. Stir in lime juice, green onions (or chopped onion), chili pepper, cilantro, sea salt, cumin and black pepper.
  3. Place in a serving dish, and serve immediately with chips, veggies, or as an accompaniment to savory dishes; or chill in airtight container until serving time.
  4. Makes about 2 cups; 8 (1/4-cup) servings.
