How to make the sandwich filling

Step 1: Begin prepping your celery by evenly cutting the stalks into quarters with a paring knife – an ideal tool for this job.

Step 2: Now, let’s get started on the spring onion. Begin by slicing it into four sections.

Cut it into small, finely-chopped pieces.

Step 3: Slice and deseed one-half of a jalapeno using your paring knife. Note that for this recipe, you only need half of the pepper.

Then, thinly slice the jalapeno into strips.

Chop the jalapeno into tiny pieces.

Step 4: Delicately pull apart the leaves from stems and gather them in a bundle.

Subsequently, use a utility knife to chop the cilantro leaves finely.

Step 5: Open a can of white Albacore tuna packed in water – it’s a lighter-calorie and low-fat option than oil canned varieties.

Drain the liquid from the tuna.

Now, take the tuna and put it into a medium bowl. Utilize a fork to flake it into tiny pieces for an even texture.

For Step 6, combine the chopped celery, spring onion, jalapeno and cilantro with your tuna to create a flavorful blend. Make sure everything is mixed together thoroughly before continuing on!

Sandwich assembly

Constructing the sandwich is step 8; smear half the tuna filling onto one slice of bread.

Then, top it with a generous helping of lettuce or any other greens. Lastly, cover with another slice of bread and press down lightly to complete your tuna sandwich. If you’d like to, place your sandwich on a preheated skillet or grill for about two minutes on each side for a crisper sandwich. Repeat the process to make another sandwich.

Ingredients

  • 1 celery diced into very small chunks
  • ½ spring onion finely chopped

  • 2 slice bread Wholegrain or choose your favourite
  • ½ cup lettuce or your favourite greens

Instructions

  • Transfer the drained tuna to a medium-sized bowl and thoroughly mash it into tiny flakes using a fork.
  • Stir together diced celery, spring onion, jalapeno and cilantro with the tuna.
  • Add Greek yogurt, curry powder and season with salt and pepper. Thoroughly stir until all ingredients are evenly incorporated.
  • Spread half the tuna mixture on one slice of bread, adding plenty of lettuce or other leafy greens on top. Finish with a second slice and press to create your sandwich. Repeat the process with a second sandwich.
